Why processed meat is uniquely problematic in CKD

Three things stack together:

  1. Additive phosphate. Manufacturers use phosphate salts as preservatives and water-binders. These are absorbed almost completely (~ 90–100%), unlike natural phosphate from meat (~ 60%) or plants (~ 40–50%). For CKD patients, the gram-for-gram phosphate load of processed meat can be far higher than fresh meat.
  1. Sodium. Curing and processing rely on salt. 100 g of ham typically contains 1.0–1.5 g salt. A bacon sandwich and a sausage roll easily exceed half the day's salt allowance before anything else.
  1. Saturated fat. Sausages, salami and bacon are high in saturated fat — bad for cardiovascular risk, which is already the leading cause of death in CKD.

On top of this, the WHO IARC classified processed meat as a Group 1 carcinogen in 2015 (sufficient evidence for colorectal cancer). The 'kidney case' is independent of the cancer case — but both point the same way.

Spotting additive phosphates on the label

Look for these E-numbers in the ingredients list:

  • E338 — phosphoric acid
  • E339 — sodium phosphates
  • E340 — potassium phosphates (also adds potassium)
  • E341 — calcium phosphates
  • E450 — diphosphates (sodium pyrophosphate)
  • E451 — triphosphates (sodium tripolyphosphate)
  • E452 — polyphosphates
