Plant protein with a CKD advantage
Replacing some animal protein with plant pulses lowers dietary acid load and improves bicarbonate balance — useful in stages 3–4 CKD. Cannellini beans deliver protein with phosphate locked up in phytate, which humans absorb poorly (~ 30–50%) compared with phosphate additives in processed meat (~ 90% absorbed).
Practical CKD-friendly ideas
- Tuscan-style cannellini + kale soup (use low-K spring greens instead of kale) with 60 g beans per portion.
- Cannellini bean mash: 50 g beans + olive oil + garlic + lemon — a low-K alternative to mashed potato.
- Mediterranean cannellini salad: drained beans + cherry tomatoes + cucumber + red onion + olive oil + basil.
- Avoid: tinned baked beans in tomato sauce (sugar + salt), 'mixed bean salad' delis (sodium), pre-made cassoulet (sodium + processed meat phosphate).
