Why paneer beats hard cheese in CKD
Mature cheeses like cheddar concentrate phosphate during ageing. Fresh cheeses (paneer, ricotta, cottage cheese) have ~ 50% less phosphate per 100 g. Paneer is also unsalted at production, so you control sodium when you cook with it.
The curry problem
Paneer tikka masala from a takeaway can deliver 2.5–4 g salt per portion (40–65% of the NHS 6 g daily limit) — from the sauce, ghee, and added salt. Home cook with: fresh tomatoes, onion, ginger, garlic, cumin, coriander, garam masala, no added salt, finished with a small spoon of cream or yoghurt.
Practical CKD-friendly ideas
- Paneer cubes pan-fried in 1 tsp oil with pepper, served with cucumber raita.
- Saag paneer made with low-K spring greens or pak choi (not full spinach) — 50 g paneer per portion.
- Paneer skewers (paneer + peppers + onion) brushed with lemon, cumin, paprika — no shop marinades.
- Avoid: jar sauces (sodium), takeaway paneer dishes, processed paneer wraps.
