Why halloumi is so salty
Halloumi is brined during production and again stored in salt water in the packet. Even 'authentic Cypriot' halloumi runs 2.5–3.0 g salt per 100 g — among the saltiest cheeses sold in UK supermarkets. The salt is what gives it the squeaky texture and high melting point.
Renal-friendly cooking
Drain off all the brine, then rinse the block under cold running water for 30 seconds. This removes ~ 15–20% of the surface salt. Pat dry, slice 5 mm thick, dry-fry or grill without added salt. Squeeze fresh lemon on top instead of seasoning.
Practical CKD-friendly ideas
- 1 grilled halloumi slice (~ 40 g) on a low-K salad with cucumber, lettuce and rocket.
- Halloumi and pepper skewers (low-K peppers, no added salt).
- Use paneer instead in stir-fries and curries — it grills similarly with zero salt.
- Avoid: halloumi wraps (white wrap + sauce + chips = sodium overload), halloumi fries from takeaways (often 5+ g salt per portion).
