Fresh vs block — the sodium gap
Fresh mozzarella is stored in mild brine and stays naturally low in sodium. Block mozzarella (Cathedral City, Tesco grated 'Italian style') is dried, pressed and pre-salted to melt evenly and resist mould — sodium triples. On a UK 6 g salt/day budget, a 30 g portion of block mozzarella uses ~ 7% versus ~ 2% for fresh.
Practical CKD-friendly ideas
- Caprese salad: 40 g fresh mozzarella + 2 sliced tomatoes + basil + olive oil + balsamic. No added salt.
- Bocconcini (small mozzarella balls) skewered with cherry tomatoes as a starter.
- Homemade flatbread pizza: thin base, low-salt tomato sauce, 30 g mozzarella, peppers, mushrooms.
- Avoid: deep pan takeaway pizza (sodium overload), mozzarella sticks (breaded, deep-fried, salty).
